Piggy-Back Pork Chops With Apples

Kids Love This Meal!

Ever had a pork chop recipe with apples? Its one of my favorite pork recipes and kids love it too! I call it Piggy-Back pork chops.

Have you ever wondered how or where the word “piggyback” originated? Well, nobody knows for sure but here are a few of theories:

The term ”Piggyback” has been around since at least the 16th century. The earliest form of the term “pick pack,” doesn’t mention pigs, so apparently bacon came later. “Pick,” is an old English word akin to “pitch” meaning “to throw or put”―as we might pitch a tent, today. The “pack” was probably the load carried, “pickaback,” may have meant to “pick (put) the load on someone’s back. Eventually, through a progression known as “folk etymology,” people replaced the sense-less (“picka”) with a word that sorta, maybe, kinda did make sense: “piggy.” Hence, “piggyback.” Obviously, it didn’t make much sense, as most pigs would heartily oppose being hauled around in this manner, but at least it resembled normal English.

Another theory: it originates from hog hunting. The hunter ties the deceased hog’s legs together around his waist and holds the pigs front hooves, thus piggybacking the pig all the way home, or to his vehicle.
And yet another: adolescent pigs play this game for hours on end– jump on the back of a littermate with his front feet and holds on as long as until the “other pig has had enough and either sits down or rolls over.
No matter how or where piggyback came from, once you try this delicious recipe, you’ll be glad it did!

8 pork chops; ¾” thickpiggy back pork chops
½ cup apple juice
½ cup yellow raisins
1 tsp salt
¼ cup packed light brown sugar
¼ tsp ground nutmeg
¼ tsp ground cinnamon
3 large red apples; cut into 6-8 wedges
½ cup water

Preheat oven to 350°. Brown the pork chops in a heavy, greased skillet over medium heat. Then arrange them in a 2 quart, shallow baking dish. Pour apple juice, raisins and salt over pork chops. Cover and bake for 45 minutes. Flip chops. Mix brown sugar, cinnamon and nutmeg. Coat the apple wedges with this sugar mixture. Arrange apples around the pork chops. Dust apples with the remaining mixture and pour water atop pork chops and apples.

Cover and return to oven for 15 more minutes.
